And personally, I think it tastes better than decaffeinated coffee.

Chicory coffee is made by roasting chicory root much like is done for coffee beans. Then it is either served alone or combined with regular coffee beans depending on your preference for caffeine or no caffeine. 

The chicory plant is also known as Chicorium Intybus and is related to Belgian endive and dandelions. Grown all over the globe, chicory is used primarily for its nutritious root.
